HAZELNUT & CHOCOLATE MUFFINS

 

Who’s hungry for homemade muffins ?

Recipe : for 12-14 muffins

Ingredients :

125g of chocolate
150gof butter
2 eggs
200g of flour
1 pack backing powder (12g)
10cl of milk
50g white sugar, 50g brown sugar et 1 vanilla sugar pack
30g of hazelnut powder & 15g of nutella
1 pinch of salt

Directions :

Preheat oven to 180 degrees C

1) Whisk eggs and sugar in a bowl
2) Add butter and milk, and mix
3) Melt 50g of  chocolate and add it to the previous mixture
4) Add flour, baking powder and salt, mix
5) Add hazelnut powder, nutella.
6) Cut the rest of chocolate to make your own chips and add half in the mixture.
7) Fill prepared muffins cups 3/4 full and sprinkle with remaining chocolate chips.

Bake in preheaten oven about 15 minutes and let it cool 10 minutes.

VEGGIE BURGER IN TAIPEI

As a meat lover and burger expert, I was a little bit skeptical about getting a veggie burger. My curiosity took over my reticence and i’m so happy that I tried. While eating this veggie burger I didn’t even noticed that it was without meat inside. Well, I did notice it but didn’t miss it as much I thought I will. This Eggplant Bacon Cheese burger, from Ooh Cha Cha next to Guting MRT in Taipei, was so surprisingly good and tasty ! My friend had the Mushroom and Pesto burger. In both of this burger, the steak has been replaced by a red beetroot steak, and in mine the bacon by eggplant slices.

For our drinks, we had the Fruity Punch made of strawberry, organic apple, mango, organic seasonal greens and freshly squeezed orange juice and the Berry FulFilling made of apple juice, strawberry, blueberry, homemade almond butter and romaine.

I highly recommend this place to all the veggies/vegans but also to anyone who likes to eat healthy food. Next time, I’ll have to try their Organic Kind Bowls and Raw Desserts!

CHOCOLATE CUPCAKES

I love this cupcakes so much and I miss cooking them ! That’s one of the disadvantage of living in Taiwan. No real kitchen with oven, so no baking for me. Instead, I’m going to share with you my recipe for this delicious cupcakes.

Recipe for 12 delicious cupcakes

Preheat oven to 180°C

For the Base :
1) Mix together 100g of sugar with 85g of melt butter.
2) Add 2 eggs and beat them.
3) Add 150g of flavor, 1 package of vanilla sugar (7,5g) et ½ of a package of baking powder (6g) + 1 cup of cocoa powder and beat.

Fill the muffin cups 3/4 full and bake for 20-25min.

Let cool the cupcakes before topping.

Topping:
1) Mix 200g of chocolate with 7,5cl of milk
2) Add 175g of Icing sugar/confectioners sugar
3) Let cool the taupins mix in fridge for 10min to obtain a thick frosting. Fill the piping bag with the topping and put it on the cupcakes!
